Quince jelly

You need:

For the juice :

•  2 kg quinces
•  750 ml water
•  250 g sugar
•   1 vanilla


For each liter of juice you further need:
•  1 kg sugar
•  1 lemon
•  2 T rum

Preparation:

  1. Wash quinces, cut them into small pieces and put them in pot. Add vanilla and sugar. Let simmer for 30 minutes. Take it off the stove and let stand for 1 hour.
  2. Strain liquid using fine strainer or clean dish cloth into measuring cup. Exactly determine amount of juice and amount of sugar according to proportion indicated above. Boil juice and add sugar bit by bit. Cook for 10 - 15 minutes. Add rum and lemon juice and fill jelly in previously prepared glasses. Immediately close them using "deti preservation 1-2-3, "deti twist-off lid" or "deti preservation rings". Do not forget to put a sticker indicating the date of preparation on each glass.


Strawberry-rhubarb-marmalade

You need:

•  500 g rhubarb
•  500 g strawberries
•  1 kg Gelier sugar or ½ kg Gelier sugar 1:2
•  5 T rum

Preparation:

  1. Peel rhubarb and cut it into thin pieces. Wash strawberries and mash them using a potatoe masher or fork. Mix strawberries and rhubarb and put them into big pot. Add sugar and boil mixture for 4 minutes while stirring continuously.

  2. Add rum and stir. Fill the previously prepared glasses with hot mixture and immediately close them using "deti preservation 1-2-3 or "deti twist-off lid". Do not forget to put a sticker indicating the date of preparation on each glass.


Pineapple-grapefruit-marmalade

You need:

•  1 pineapple
•  1-2 pink grapefruit
•  1 kg Gelier sugar
•  possibly 1/2 t ginger, some rum or grenadine syrup

Preparation:

  1. Peel pinapple and remove stringy middle. Cut grapefruit into 8 pieces and cut out pulp. Cut fruit in small pieces. Put fruit into a big pot and mix with ginger and sugar. Let stand for 30 minutes.

  2. Heat slowly and boil mixture for 4 minutes while stirring continuously. Remove froth, fill the previously prepared glasses with the hot mixture and immediately close them using "deti preservation 1-2-3" or "deti twist-off lid". Do not forget to put a sticker indicating the type of marmalade and the date of preparation on each glass.


British Lemon-Orange-Marmalade

You need:

•  10 oranges
•  5 lemons
•  1 kg Gelier sugar or ½ kg Gelier sugar 1:2

Preparation:

  1. Squeeze oranges and lemons and mix juice with the sugar according to the proportion indicated above. Boil mixture for 4 minutes while stirring continuously.

  2. Fill the previously prepared glasses with the hot mixture and immediately close them using the "deti preservation 1-2-3" or "deti twist-off lid". Do not forget to put a sticker indicating the contents and date of preparation on each glass.


Red (black) Currant-Marmalade

You need:

•  1,5 kg currants
•  1 kg Gelier sugar or ½ kg Gelier sugar 1:2
•  1 T schnapps (obstler)

Preparation:

  1. Wash currants and get off branches using a fork. Smath them and push them through drainer. Mix puree with Gelier sugar. Boil mixture for 4 minutes while stirring continuously.
  2. Add schnapps. Fill the previously prepared glasses with hot mixture and immediately close it using the "deti preservation 1-2-3", "deti twist-off lid" or "deti preservation rings". Do not forget to put sticker indicating the type of marmalade and the date of preparation on each glass.


Cherry-Marmelade

You need:

•  1,5 kg cherries
•  1 kg Gelier sugar or ½ kg Gelier sugar 1:2

Preparation:

  1. Wash the cherries, remove the stalks, take out the pits using the "deti pit remover" and mash them.

  2. Mix each kg of puree with 1 kg of sugar in a big pot. Boil the mixture for 4 minutes while stirring continuously. Fill the previously prepared glasses with the hot mixture and immediately close it using the "deti preservation 1-2-3 or deti twist-off lid. Don't forget to put a sticker indicating the type of marmalade and the date of preparation on each glass.


Multi-fruit-marmalade

You need:

•  1 kg mixed fruits (e.g. strawberries, raspberries,etc.)
•  1 kg Gelier sugar or ½ kg Gelier sugar 1:2

Preparation:

  1. Wash fruit, mix them and push them through strainer. Mix each 1 kg of puree with 1 kg of sugar in a big pot. Boil mixture for 4 minutes while stirring continuously.

  2. Fill the previously prepared glasses with the hot mixture and immediately close it using the "deti preservation 1-2-3" or "deti twist-off lid". Do not forget to put a sticker indicating the type of marmalade and the date of preparation on each glass.


Plum-Marmalade

You need:

•  1 kg plums
•  1 kg Gelier sugar or ½ kg Gelier sugar 1:2
•   skin of 1 lemon
•  1 t cinnamon
•  1 anise
•  (some ginger powder or 1 knife-tip of ground cloves)

Preparation:

  1. Wash plums, remove pits using "deti pit remover" and cut into small pieces. Mix with other ingredients.


  2. Put puree, anis and sugar into a big pot and boil it for 4 minutes while stirring continuously. Take out anise, fill the previously prepared glasses with the hot mixture and immediately close it using the "deti preservation 1-2-3" or "deti twist-off lid". Do not forget to put a sticker indicating the type of marmalade and the date of preparation on each glass.

Pumpkin-Chutney

You need:

•  450 g pumpkin pulp
•  110 g sultanas
•  30 g dried chillies
•  6 cloves of garlic
•  15 g fresh ginger
•  1/2 l vinegar
•  450g sugar, pinch of salt

Preparation:

  1. Cut pumpkin in big pieces and peel it. Take out pits and cut pumpkin into cubes. Cook in slightly salted water until pumpkin is glassy. Drain pumpkin pieces and smash. Wash and drain sultanas and remove stalks. Chop up chilies using a mortar. Peel and chop garlic and ginger; mix with some vinegar.

  2. Put rest of vinegar in pot and add sugar, salt, sultanas and spice-vinegar-mix. Stir occasionally while boiling on medium heat for 15-20 minutes. Add pumpkin and boil until mixture is viscous. Season it, put it into prepared glasses and immediately close it using "deti preservation rings".


Pickles

You need:

(Recipe for glass of 1 liter)
•  Cucumbers
•  1/2 Onion
•  2 t sugar
•  1 t salt
•  1 t pickle spices
•  cucumber vinegar (finished product)

Preparation:

  1. Wash and clean small or medium sized cucumbers. Put them into prepared jars and leave space of 2 cm on top. Slice ½ onion and put it in between cucumbers. Add sugar, salt and pickle spices.

  2. Fill glass with cucumber vinegar, put "deti preservation rings" on glass and close it using "deti Universalbügel". Sterilize for 20 minutes on 80° in preservation
